Easy Breakfast Casserole Recipe Ingredients
To make this delicious low-carb egg casserole you will need these simple ingredients:
- 1/2 lb breakfast sausage (here)
- 1 pkg (10oz) bacon (here)
- 1/2 cup shredded cheddar cheese (45g) (here)
- 1/2 medium vidalia onion. diced (75g)
- 1 red bell pepper, diced (100g)
- 1 green bell pepper, diced (100g)
- 1/2 cup cherry tomatoes, sliced (75g)
- 1 cup fresh spinach (35g)
- 1 bundle of green onions, sliced
- 1/2 Tbsp (2 leaves) fresh sage, chopped
- 1 Tbsp fresh parsley, chopped
- 10 large eggs (here)
How to Make a Low-Carb Breakfast Casserole
First, preheat the oven to 375 degrees F. Then chop, dice, and gather your vegetables, and shred the cheese. You can use pepper jack cheese or cheddar cheese. Make sure to use good-quality cheese. This is the cheese we like: Cheese. Next, start by preparing the meats.

Prepare the Egg Casserole Meats
Start with the bacon. Cut the bacon into small pieces and cook over medium-high heat until all fat is rendered.
When the fat is cooked down remove the bacon with a slotted spoon and place it on paper towels to drain. Set aside.
Next, the sausage. You can use ground breakfast sausage or links. If using links, dice the sausage up into bite-sized pieces. Then add the sausage to a large skillet and cook over medium heat for 3-5 minutes, or until cooked through.
Egg Breakfast Casserole with Vegetables
Add the onions to the skillet with the sausage and cook until translucent, about 2 minutes.
Next, add the green and red bell peppers to the skillet.
Then add the tomatoes.
Stir to combine and cook for another 2-3 minutes.
Remove the skillet from the heat and add the baby spinach. You can opt for kale if you prefer it to spinach.
Then add the fresh herbs to the mixture.
Stir to combine, The heat of the sausage and vegetables will be enough to slightly wilt the greens. Add salt and pepper to taste.
Lastly, add the bacon back into the skillet.

Add the eggs to a large bowl. Save the shells for your compost bin. These are great for the garden.
Whisk the eggs, as if to create one giant scrambled egg.
Prepare a Casserole Dish
Spray the baking dish with a little olive oil cooking spray. Then transfer the vegetable, bacon, and sausage mixture into the baking dish.
Next, pour the egg mixture into the dish over the meat and veggies.

Cover with foil and bake for 35-40 minutes. Remove foil for the last 5 minutes of cooking.

Cook until the cheese is melted, the eggs are cooked through and the edges are golden brown. To test – Stick a long toothpick into the center of this easy low carb breakfast casserole to make sure that the eggs are fully cooked through. If the toothpick is still wet, then the casserole needs a few more minutes.

- Then pour the egg mixture into the baking dish.
- Sprinkle green onions and shredded cheese on top.
- Cover with foil and bake for 35-40 minutes until golden brown and eggs are full cooked through.
