This vanilla muffin recipe makes the best fluffy vanilla muffins. They are made with simple ingredients and pure vanilla powder for a classic vanilla flavor.

Delicious Vanilla Muffin Recipe Ingredients

To make this easy muffin recipe you will need a few simple ingredients:

Dry Ingredients 

  • 1 1/2 cups almond flour
  • 1/3 cup tapioca flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup coconut sugar
  • 3/4 tsp vanilla bean powder
  • optional – powdered sugar for dusting the top of the muffins

Wet Ingredients

  • 2 large eggs, room temperature
  • 1 medium banana, mashed
  • 3 Tbsp coconut oil
  • 1/2 tsp apple cider vinegar 
  • 1/4 milk of choice (we use cashew milk)

How to Make the Best Vanilla Muffins

First, preheat the oven to 350 degrees F.

Then add the almond flour to a large bowl.

Next, add the tapioca flour, baking powder, baking soda, and salt to the bowl.

Then add the pure vanilla bean powder and coconut sugar.

Pure vanilla powder in its purest form, comes from real vanilla beans and vanilla bean pods that have been dehydrated and finely ground. It doesn’t include any artificial fillers, sugars, alcohols, or additives. The vanilla powder has a more intense, sweeter aroma and flavor than pure vanilla extract, making it the perfect ingredient for this easy vanilla muffins recipe. This is the vanilla powder that we use and love: Vanilla Powder.

Whisk the dry ingredients together. Make sure to break up any lumps and bumps of the flour and/or sugar.

Once the dry flour mixture is fully combined set it aside.

Wet Ingredients

In a separate medium bowl add the eggs, mash a banana with a fork, and then add the mashed banana to the eggs.

Then add the apple cider vinegar, melted coconut oil, and milk to the bowl. We are using cashew milk, but you use whichever milk you prefer.

Whisk the wet ingredients until combined.

Pour the wet ingredients into the dry ingredients and stir until smooth.

Prepare a Muffin Tin

Line a muffin pan with muffin liners for easy baking.

Then scoop the muffin batter into the paper liners. Use a 1/4 cup measuring cup to make sure that the muffin cups are filled equally.

Place these simple vanilla muffins into the preheated oven and bake for 16-17 minutes until golden brown, and they pass the toothpick test.

​Let the Muffins Cool 

Carefully remove the sweet muffins from the muffin tray and transfer them to a wire rack to cool.

Leave these delicious muffins to cool for a few minutes on the cooling rack.
