Datil Pepper Spicy Wings (St Augustine Recipe)
These datil pepper spicy wings are made with delicious hot sauce using fresh datil peppers, butter, and regular chicken wings. These wings have great flavor with just enough heat without being too spicy.

What is a Datil Pepper?
Datils are one of the most popular locally grown peppers in St. Augustine, Florida. St Augustinians take their hot peppers very seriously and you can often find an abundance of delicious datil pepper products at the local restaurants and farmer’s markets in the area.
We decided to plant datil pepper seeds and grow our own datils in our home garden here in St Johns County. Datil peppers are small peppers, orangeish-yellow in color, and have a mild heat level, with around 100,000 to 300,000 heat units on the Scoville scale. Datil peppers have a sensational sweet-hot flavor that makes them perfect for making homemade hot sauce. That homemade sauce is what gives these chicken wings a wonderful full-bodied flavor.
What You Need to Make Datil Pepper Spicy Chicken Wings
To make these tasty Datil pepper spicy wings you will need:
- 3/4 stick of grass-fed butter
- 1 cup homemade Datil hot sauce
- 3 lbs chicken wings, thawed
- 2 quarts avocado oil

How to Make Hot Datil Pepper Sauce Fried Wings
First, place the butter in a medium saucepan.
Add the datil sauce to the pot, if the hot sauce is too thick, you can add a little apple cider vinegar to the bottle, and shake to get all of the sauce out of the bottle.
Warm over medium heat until the butter is melted. Stir to combine.
Heat the Oil
Pour the avocado oil into a large pot on the stove. Make sure that you have enough oil in the pot to be able to fully submerge the chicken wings to cook. But not so much oil that it may overflow, or spill over the sides of the pot.
Heat the oil over medium-high heat until it reaches 350 degrees F. You can use a kitchen meat thermometer to check the temperature.
Fry the Chicken Wings
When the oil reaches 350 degrees F, carefully, with tongs, place one layer of chicken wings into the oil to cook. Make sure the wings are thawed and not frozen. Do not stack the wings. You will need to do this a few times to cook all of the wings.
Cook the wings for about 20 minutes, until fully cooked and golden brown. Then, carefully, with tongs, remove the wings from the oil and place them on layers of paper towels to drain.
Toss the Wings in Datil Sauce
Spoon 2 large spoonfuls of the wonderful concoction of hot sauce and butter into a large bowl.
Next, add the cooked wings to the bowl and toss to coat. Or use a large spoon to mix the wings until fully covered in the sauce.
Datil Pepper Chicken Wings
Serve these datil pepper spicy wings with celery and carrot sticks.
Don’t forget the side of ranch or blue cheese dressing for dipping.

Datil Pepper Spicy Wings (St Augustine Recipe)
These datil pepper spicy wings are made with delicious hot sauce using fresh datil peppers and regular chicken wings.
Ingredients
- 3/4 stick of grass-fed butter
- 1 cup homemade Datil hot sauce
- 3 lbs chicken wings, thawed
- 2 quarts avocado oil
Instructions
- Combine butter and hot sauce in a medium, pot over medium heat.
- Warm until butter melts, stirring to combine
- Fill a large pot with avocado oil and heat to 350 degrees F
- Use a meat thermometer to check the oil temperature
- Carefully, place chicken wings into the oil
- Cook for 20 minutes, until thoroughly cooked and golden brown.
- Remove wings from oil, and place on layers of paper towels to drain.
- Spoon the sauce mixture into a large bowl.
- Add wings and toss to coat
- Serve with celery sticks, carrot sticks, blue cheese, and/or ranch dressing
