Healthy Coffee Cake Recipe Ingredients 

The ingredients for this easy almond flour coffee cake recipe are broken down into two parts. First, is the delicious moist cake, and second, is the sweet crumble topping. These can all be found at your local grocery store or online:  

Coffee Cake Dry ingredients:

  • 3 cups almond flour (here)
  • 3/4 cup tapioca flour (here)
  • 2/3 cup coconut sugar (here)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 tsp vanilla bean powder (here)

Coffee Cake Wet Ingredients:

  • 1/2 cup unsweetened applesauce
  • 2/3 cup unsweetened almond milk 
  • 1/3 cup coconut oil, melted
  • 3 large eggs, room temperature
  • 1 tsp almond extract (here)

Crumb Topping Ingredients:

  • 3/4 cup almond flour
  • 1/3 cup maple sugar (here)
  • 2 tsp ground cinnamon
  • 1/4 coconut oil, NOT melted
  • 1/4 cup pecans, chopped

How to Make the Most Delicious Coffee Cake 

First, preheat the oven to 350 degrees F. Then pour the almond flour into a large bowl.

Almond flour is a great gluten-free flour option. It is made from one ingredient: ground almonds. You can either purchase almond flour or make your own with plain almonds and a high-speed food processor. Don’t be confused by almond meal, which is usually unpeeled almonds, whereas almond flour has a finer texture making it a better flour alternative for baking. In a pinch, almond meal may work if necessary.

Next, add the tapioca flour to the bowl.

Add the coconut sugar.

Then add the rest of the dry ingredients to the bowl.

Whisk the flour mixture to combine.

Moving on to the wet ingredients. Crack three eggs into a medium bowl and add the almond milk to the bowl.

Next, add the applesauce to the bowl.

Then add the melted coconut oil.

Add the almond extract to the bowl.

Stir to combine.

Pour the wet ingredients into the dry ingredients. Stir thoroughly to combine the coffee cake batter and set aside while you prepare the cinnamon crumb topping.

Almond Flour Coffee Cake Crumb Topping

To make the crumb topping with perfect sweetness, in a small bowl combine the almond flour and maple sugar.

Then add the ground cinnamon.

Next, add the chopped pecans to the bowl. If you don’t have pecans you can use sliced almonds.

Lastly, add the coconut oil. Make sure that the coconut oil is not melted.

Use a fork to mix the crumble topping ingredients. The ingredients should mix together but remain in a crumbly texture with large pieces of crumble.

Prepare a Baking Dish

Line an 8×8  baking pan with parchment paper. Pour half of the coffee cake batter into the prepared pan.

Then sprinkle half of the crumble topping onto the top of the batter. Pour the remaining batter into the pan and top with the remaining crumb topping. This will add a bit of sweet nutty flavor to the center of the cake.

Bake for 40-45 minutes until golden brown. Test the sweet cake with a toothpick to make sure that it is fully cooked. Remove from the oven and place on a wire rack to cool.

Instructions

  3. Then in a medium size bowl combine wet ingredients for coffee cake.
  4. Add wet ingredients to dry ingredients and stir to combine.
  5. Set aside to prepare the crumb topping.
  6. Combine crumb topping ingredients in a small bowl and toss gently with a fork.
  7. Line an 8x8 baking pan with parchment paper.
  8. Pour half of the coffee cake batter into the pan, then half of the crumble mixture. then the remaining cake batter followed by the remaining crumb topping.
  9. Bake for 40-45 minutes until golden brown. Test with a toothpick to make sure the cake is fully cooked.
  10. Remove from oven and place on a wire rack to cool.
  11. Enjoy with morning coffee or anytime.

Notes
