Cajun Chicken Alfredo Recipe (Easy One Pot Meal)

Cajun Chicken Pasta Recipe with Creamy Alfredo Ingredients
The juicy chicken breast, creamy alfredo sauce, spices, and pasta are the main ingredients for this creamy cajun chicken alfredo. All the other ingredients are what tie this amazing flavor combination together into an easy dinner that everyone will love. - 10 oz farfalle pasta (measured dry) (here)
- 2 Tbsp olive oil
- 3 cloves fresh garlic, minced
- 1 lb boneless skinless chicken breasts, cut into bite-size pieces (here)
- 2 1/2 tsp cajun seasoning (here)
- 1-15 oz jar alfredo sauce (here)
- 2 handfuls of fresh spinach (3 oz)
- 1 bunch scallions, chopped
- 1 pkg andouille, pork or smoked sausage, sliced (here)
- 1 ham steak, cut into small cubes
- 1 green or red bell pepper, diced
- salt and pepper to taste
- optional – shaved parmesan cheese
How to Make Creamy Cajun Chicken Alfredo Pasta
You will need a large skillet and a large pot. The pot is to cook the pasta, everything else is done in the skillet. We love our Caraway nonstick, non-toxic, ceramic cookware. You can find it online here: Caraway Cookware.
Pasta
First, cook the pasta according to the package instructions. Cook it al dente, then rinse and set aside.
Chicken, Sausage, and Spices
Then add the olive oil to the skillet over medium-high heat.
When the oil is hot add the minced garlic to the skillet and cook for 30 seconds to a minute.
Next, add the pieces of chicken and your favorite cajun seasoning. If you have homemade cajun seasoning, even better. Cook for 5-6 minutes until the chicken is almost cooked. The sides of the chicken should show no raw pink.
Then add the sausage and the ham steak to the skillet. You can use andouille chicken sausage, pork sausage, or whatever sausage you prefer. For the ham steak, you can use the prepackaged ham steak that you often find at the grocery store. If your local store doesn’t have any you can simply ask the deli counter to cut one 1/4″ slab of ham.
Stir and cook for 5-6 minutes until the meats are cooked and combined with the Cajun creole seasoning.
Vegetables
Next, add the chopped bell peppers to the skillet.
Add the fresh spinach to the skillet and stir.
Lower the heat a little and cook over medium heat until the spinach is wilted. Add salt and pepper to taste.
Alfredo Sauce
Next, add the alfredo sauce. We are using a cashew-based dairy dairy-free alfredo but you can use traditional alfredo sauce or even a creamy homemade alfredo sauce if you make it. Stir to combine and allow the sauce to heat up.
Recipe Completion
Once the alfredo sauce is warmed up add the cooked pasta to the skillet.
Reduce to low heat and stir for 3-4 minutes to combine all of the ingredients together.
Creamy Alfredo Pasta Dish with Cajun Chicken and Sausage
The best thing about one-pot recipes is that you can place the entire pot or skillet right on the dinner table.
This is a great recipe for a busy weeknight. The creamy sauce plus the kick of the cajun spices makes this a perfect alternative to your typical pasta night.
If you prefer a bit more fire you can add a pinch of red pepper flakes to the dish. Otherwise, simply top with a few pieces of chopped scallions and shaved parmesan cheese.

Instructions
- Cook pasta according to package instructions. Cook al dente, rinse and set aside.
- In a large skillet, heat the oil, add garlic and cook for 30 sec to a minute.
- Then add chicken pieces and cajun seasoning. Cook on medium heat until chicken is almost done.
- Add sausage and ham pieces to the skillet.
- Then add bell peppers, and spinach.
- Cook spinach until wilted.
- Add alfredo sauce to the skillet. Continue to heat while stirring.
- Then add pasta tot he skillet. Stir to combine.
- Top with chopped scallions and shaved parmesan cheese.
