Homemade Coffee Biscotti Ingredients
To make these biscotti cookies you will need:
- 1 3/4 cup almond flour
- 2/3 cup coconut sugar
- 1 tsp baking powder
- 1/8 tsp sea salt
- 2 Tbsp freshly ground coffee beans
- 1/4 tsp vanilla bean powder
- 1/4 cup toasted hazelnuts, roughly chopped
- 1/4 dark chocolate chips
- 1 large egg
- 1 Tbsp coconut oil, melted
How to Make Delicious Biscotti
First, preheat the oven to 350 degrees. While the oven preheats, toast your hazelnuts by spreading them out on a parchment-lined baking sheet and placing them in the oven for approximately 10 minutes. Keep an eye on them and make sure they don’t burn. They only need to toast slightly. Then remove them from the oven to cool. Once cooled, roll the hazelnuts in between the palms of your hands so that the outer skin falls off. Next, roughly chop the hazelnuts and set aside.
Dry Ingredients:
Next, move on to the dry ingredients. Pour the almond flour into a large bowl.
Add the coconut sugar to the bowl.
Add the coarse coffee grounds.
Then add the baking powder, sea salt, and vanilla bean powder to the bowl.
Stir to combine.
Wet Ingredients:
Next, add the egg and melted coconut oil to the large mixing bowl.
Stir to combine. This may appear too dry, don’t worry. It’s not.
Fold in the toasted hazelnuts and dark chocolate chips.
Form Biscotti Dough
Divide dough into equal portions and form into two 6-inch log shapes, or one large log on a prepared baking sheet. Place into the preheated oven and bake for 20 minutes until golden brown.
Remove the cookie sheet from the oven and allow the biscotti to cool to room temperature. You can move them to a wire rack, or leave them on the parchment paper. Approximately 30 minutes.
Reduce the oven temperature to 250 degrees.
Next, use a serrated knife to cut the biscotti into thick slices, approximately 1-2″ wide.
Spread the coffee biscotti cookies out.
Flip the biscotti cookies on the side and place them back in the oven for the second baking for 20-30 minutes. Then flip them to the other side and bake again for an additional 20-30 minutes. The second bake dries out the cookies to create the crunchy biscotti texture that you love.

FAQs and Recipe Variations
- What can I use in place of vanilla bean powder? If you don’t have vanilla bean powder you can use vanilla extract. This is not a 1:1 swap. In place of 1/4 tsp of vanilla bean powder, you would need 1/2 tsp vanilla extract.
- Can I use white chocolate chips in place of dark chocolate chips? Sure, I don’t see why not.
- Do I need to add almond extract? You can, but you don’t have to. We like to use almond flour instead of all-purpose flour. The almond flour adds a bit of nutty flavor and makes this biscotti recipe gluten-free.
- Can I use espresso powder or instant coffee granules instead of coffee grounds? I suppose you can, we used freshly ground coffee beans, so we are unsure of whether or not the measurement would change for a swap. You can also use coffee extract to achieve the coffee flavor.

Instructions
- Preheat oven to 350 degrees.
- Place hazelnuts in oven to toast for approximately 10 minutes
- Remove hazelnuts from oven and let cool
- Roll hazelnuts between palms of your hands to remove outer skin. Roughly chop
- Set aside
- Combine almond four, coconut flour, coarse ground coffee beans, sea salt, baking powder and vanilla bean powder in a large bowl. Stir to combine
- Add egg and melted coconut oil to bowl
- Fold in chocolate chips and hazelnuts.
- Divide mixture and form into 6" logs
- Bake for 20 minutes.
- Remove from oven and let cool to room temperature, reduce temperature to 250 degrees
- Slice biscotti into 1-2" thick slices
- Flip biscotti pieces on the sides and bake again for 20-30 minutes
- Flip to the other side and bake again for 20-30 minutes
- Let cool and enjoy
