How to Make Delicious Biscotti

First, preheat the oven to 350 degrees. While the oven preheats, toast your hazelnuts by spreading them out on a parchment-lined baking sheet and placing them in the oven for approximately 10 minutes. Keep an eye on them and make sure they don’t burn. They only need to toast slightly. Then remove them from the oven to cool. Once cooled, roll the hazelnuts in between the palms of your hands so that the outer skin falls off. Next, roughly chop the hazelnuts and set aside.

Dry Ingredients:

Next, move on to the dry ingredients. Pour the almond flour into a large bowl.

Flip the biscotti cookies on the side and place them back in the oven for the second baking for 20-30 minutes. Then flip them to the other side and bake again for an additional 20-30 minutes. The second bake dries out the cookies to create the crunchy biscotti texture that you love.

FAQs and Recipe Variations

  • What can I use in place of vanilla bean powder? If you don’t have vanilla bean powder you can use vanilla extract. This is not a 1:1 swap. In place of 1/4 tsp of vanilla bean powder, you would need 1/2 tsp vanilla extract.
  • Can I use white chocolate chips in place of dark chocolate chips? Sure, I don’t see why not.
  • Do I need to add almond extract? You can, but you don’t have to. We like to use almond flour instead of all-purpose flour. The almond flour adds a bit of nutty flavor and makes this biscotti recipe gluten-free.
  • Can I use espresso powder or instant coffee granules instead of coffee grounds? I suppose you can, we used freshly ground coffee beans, so we are unsure of whether or not the measurement would change for a swap. You can also use coffee extract to achieve the coffee flavor.
