Easy to Make Chocolate Chip Coffee Cookies Recipe

These coffee cookies are so easy to make and have just the right amount of chocolate chips with a hint of coffee flavor. This coffee cookie recipe can also be called coffee biscuits due to the crunchy texture and how perfectly they pair with a cup of coffee making them a favorite among coffee lovers.

How to Make Homemade Coffee Cookies

To make this coffee biscuit recipe you will need:

Dry ingredients:

  • 1 3/4 cup almond flour
  • 2/3 cup coconut sugar
  • 1 tsp baking powder
  • 1/8 tsp sea salt
  • 2 Tbsp freshly ground coffee beans
  • 1/4 tsp vanilla bean powder (or 1/2 tsp vanilla extract)
  • 1/4 cup toasted hazelnuts, roughly chopped
  • 1/4 dark chocolate chips
  • 1 tsp lemon zest

Wet ingredients:

  • 1 large egg
  • 1 Tbsp coconut oil, melted

Toasting Hazelnuts

First, preheat the oven to 350 degrees F.

You can also use already toasted hazelnuts like these here: toasted hazelnuts. If you are using raw hazelnuts you will need to toast them and remove the outer skin. Line a baking sheet with parchment paper and spread the hazelnuts on the lined baking sheet. Place the hazelnuts in the oven while it preheats for approximately 10 minutes.

Remove the hazelnuts from the oven and allow them to cool to room temperature. Then roll the nuts between the palms of your hand to remove as much of the skin as you can. Once the skin is removed, roughly chop the hazelnuts and set aside.

Making Chocolate Chip Hazelnut Coffee Cookies

In a large bowl, add the almond flour.

Next, add the coconut sugar. We prefer this over brown sugar or white sugar, but you can use whatever sugar you like.

Add the freshly ground coffee granules to the bowl. You can use instant coffee if you’d like, but we prefer to grind our own coffee beans to get the freshest coffee aroma.

Then add the rest of the dry ingredients, minus the chocolate chips.

Use a spatula or wooden spoon and stir to combine.

Add the coconut oil to the flour mixture.

Next, add an egg to the mixing bowl. We like to use a free-range egg. The egg yolk is a bright and bold orange with free-range eggs. Stir again to thoroughly mix all of the coffee cookie ingredients.

Lastly, add the chocolate chips. Stir one last time until all ingredients are completely combined and the mixture is moist.

The best part of this cookie recipe is that you don’t need a stand mixer, which means there is less to clean up!

Forming Coffee Biscuits

To form the perfect cookie that is bite size and great for dunking I like to use a melon baller or small ice cream scoop. This makes sure that your cookie dough balls are all the same size.

Scoop each cookie ball out onto a parchment paper-lined cookie sheet.

Go back and roll each ball of cookie dough in your hand and form them into firm balls, then place them down and press them into cookie shapes so that they cook evenly.

Cooking Time for the Best Coffee Cookie

Place the baking sheet in the preheated oven. When it comes to the question: how long to bake these coffee, hazelnut chocolate chip cookies?, the answer actually varies depending on how you like your cookie. 

For soft chewy coffee cookies, bake for 10 minutes.  A couple of minutes longer (total 12-15 minutes) if you prefer them to firm up a bit. For crunchy cookies, you will still only need 15 minutes. Keep in mind that these baked cookies need to be watched. By 20 minutes the bottoms of the cookies will already start to burn. You want to make sure your cookies are golden brown but not burnt. Remove the coffee cookies from the oven and let cool on a wire rack.

Notes

Cookies will burn easily if not watched. Any more than 15 minutes in the oven and risk of burning the bottoms of the cookies increases.
