This low carb brussel sprout recipe is so easy to make and delicious. Everyone knows that everything tastes better with bacon, right? This delicious low-carb side dish is great for someone following the keto diet, but it’s also great for anyone. You don’t need to follow a certain way of eating to enjoy this easy recipe. The best part of this recipe is that it only requires 2 ingredients. Anything more than that is completely optional.

Low Carb Brussel Sprout Recipe Ingredients

Let’s start by gathering the very simple ingredients.  Brussel sprouts are a great low carb vegetable and bacon is simply delicious. Together they make the ultimate side dish. 

  • 2 lbs fresh brussels sprouts
  • 8oz pack of bacon

How to Prepare the Bacon

First, remove the bacon from the package and use a sharp knife to roughly chop it into pieces.

Chop the bacon into approximately 1/2″ pieces and set aside. This doesn’t have to be exact.

Next, cook the bacon pieces over medium heat in a large skillet or cast iron skillet. Cook long enough to render the bacon fat, make sure you don’t burn the bacon.

When the bacon fat is rendered and the skillet is left with only crispy bacon bits remove the bacon with a slotted spoon and place it on a paper towel. Leave the bacon grease in the skillet.

Prepare the Brussel Sprouts

First, rinse and clean the Brussels sprouts. Then with a sharp knife, trim the end off of each sprout and cut it in half or quarters. Small sprouts can be halved while larger sprouts should be quartered. Save the parts that are trimmed off to toss in your garden compost pile!

Toss the trimmed brussel sprouts into the same large skillet used for cooking the bacon and saute over medium-high heat in the leftover bacon fat. If by chance you accidentally got rid of the bacon fat you can use olive oil, or avocado oil to saute the brussel sprouts.

Cook for 10-12 minutes while stirring and moving the brussel sprouts around in the pan. The cooking time may be adjusted depending on how tender or firm you like your brussel sprouts. At this point, you may add salt and black pepper if you’d like. The end result should be tender brussels sprouts on the inside yet crispy on the outside. When the briussel sprouts are just about finished add the cooked bacon to the skillet and stir to combine. Remove from the heat.

This recipe is really that easy. There is no need to get fancy if you don’t want to. Even if you know someone who isn’t a fan of brussels sprouts I’m sure they will love this low carb side dish. This has become the favorite vegetable for our entire family.

  • What are some options for additional toppings to add to these keto brussel sprouts? Many enjoy the addition of parmesan cheese, balsamic vinegar, or mozzarella cheese.
  • Can I season my brussel sprouts with more than just salt and pepper? Of course, some great options are red pepper flakes, garlic powder, and onion powder. 
  • If I do not have a skillet can I roast the brussel sprouts? We do recommend a skillet so that you can saute in the bacon fat, but you may absolutely cook the brussel sprouts in the oven on a parchment paper-lined baking sheet. Make sure to spread them out in a single layer. 
  • What should I serve this keto side dish with? One of our favorite ways to enjoy this excellent side dish is alongside grilled chicken breast, or even on holidays with this smoked turkey!

Ingredients

  • 2 lbs fresh brussels sprouts
  • 8oz pack of bacon

Instructions

  1. Roughly chop bacon into 1/2" pieces
  2. In a large skillet cook the bacon to render the fat
  3. Set bacon aside on a paper towel, leaving the bacon grease in the skillet
  4. Clean, trim and quarter the brussel sprouts
  5. Saute the brussel sprouts in the bacon grease
  6. Add bacon into the skillet
  7. Serve and enjoy
