Seed Bread Ingredients

First, you will need to gather your seed bread ingredients:

  • 3 cups bread flour
  • 1 cup rolled oats
  • 1/4 cup pumpkin seeds aka pepitas
  • 1/4 cup sunflower seeds
  • 2 Tbsp chia seeds
  • 2 tsp sea salt
  • 2 tsp active dry yeast
  • 2 Tbsp raw honey
  • 1 1/2 cups warm water

How to Make Seed Bread

In a large mixing bowl combine your dry ingredients: bread flour, rolled oats, pumpkin seeds, sunflower seeds, chia seeds, and dry yeast until well incorporated. You can always get creative and add flax seeds, dried fruit, or sesame seeds if you’d like.

In a separate small bowl combine raw honey and warm water, mixing until honey is melted into the water. I like to use filtered water instead of tap. Pour the honey water into the dry ingredients. Mix until all of the flour is incorporated.

Allow Time for the Bread to Rise

Next, cover tightly with plastic wrap and allow the dough to rise.

How long should you let the bread dough sit? You will want to allow the dough to sit for at least 3 hours and even up to 12 hours overnight. After allowing your dough to rise it should have doubled in size.

At this point you, will need to shape the dough into a ball using floured hands. Then place your seed bread dough onto a pizza stone or a baking sheet lined with parchment paper. Cover the seeded bread dough and allow it to rest for 45 minutes. At this time, preheat your oven to 425F.

Take a sharp knife or blade and score the top of the dough and bake for 40 minutes or until the crust is golden brown.

Once you take the seed bread out of the oven let it rest for 10-20 minutes and cut and serve.
