Spicy Roasted Potatoes Ingredients
- 5 Large Russet Potatoes
- 1/4 cup of extra virgin olive oil
- 1/4 tsp cayenne pepper
- 1.5 tsp dried oregano
- 1/4 tsp dried chipotle powder
- 1/4 tsp crushed red pepper flakes
- 1/2 tsp sea salt
- 1/2 tsp fresh cracked pepper
- fresh parsley for garnish
First, gather your ingredients. Typically when making potatoes you can estimate one potato per person. With that in mind, this recipe yields 5 servings.

How to Make Spicy Roasted Potatoes
First, preheat the oven to 425 degrees. While waiting for the oven temperature to reach 425 you will need to prepare the potatoes and the spice mixture.
Preparing the Potatoes
Clean your potatoes by rinsing them in cold water, then pat them dry with paper towels. Next, cut the potatoes into lengthwise quarters, then slice them into 1/2-inch chunks.

Preparing the Spice Mix
In a large bowl, add all of the spices and blend thoroughly. Add the olive oil to the bowl with the spices.

Add the cut potatoes to the bowl with the oil and spice mix, and toss to make sure all of the potatoes are evenly coated.

Baking Crispy Roasted Potatoes
Carefully, pour the potatoes onto a baking sheet lined with parchment paper.

Make sure that the potatoes are spread out in a single layer on the baking sheet. Place the prepared baking sheet into the preheated oven and roast for 25-35 minutes. You will notice the sides will become crispy and develop a beautiful golden brown color.

After 25-35 minutes, turn the oven setting to broil on the high setting. Broil for 5 minutes or until golden and crisp. The potatoes will be crispy on the outside and fork-tender on the inside. Remove from the oven.

Oven Roasted Spicy Potatoes
Garnish with fresh parsley and serve on your favorite platter or serving dish. Any leftovers should be stored in an airtight container in the refrigerator for 3-5 days. Simply, reheat the leftover potatoes in the microwave, oven, or skillet.
