This hearty Italian vegetable soup with spicy sausage is made with all of our favorite things. You should be able to get all of these ingredients from your local grocery store. This is what you need to make an Italian sausage soup:
- 16 oz. Italian hot sausage
- ½ medium yellow onion, finely chopped
- 3 carrots, chopped
- 4 cloves garlic, minced
- 4 cups chicken, beef, or vegetable broth
- 28 oz. can of crushed tomatoes
- 2 cups refrigerated cheese tortellini
- 1 cup heavy/whipping cream
- 3 cups fresh kale, escarole, or fresh spinach
- shaved parmesan rind
- Salt & pepper to taste
How to Make Creamy Tortellini Soup with Spicy Sausage
First, wash, chop, mince, and prepare the ingredients.
Then place the Italian spicy sausage into a large pot or Dutch oven. Cook over medium-high heat for approximately 7 minutes, or until browned.
Remove the sausage from the pot and drain on a plate lined with a few layers of paper towels.
Use the same pot to saute the onions and carrots. Add a drizzle of olive oil if necessary to prevent sticking. Cook until the onions are translucent, approximately 4-5 minutes. Then add the garlic and cook for an additional minute.
Next, add the broth to the pot. You can use whichever flavorful broth you like best, or have on hand. Chicken broth, vegetable, and beef broth all work great. You can even use homemade broth if you have it.
Add the crushed tomatoes and sausage to the pot, and bring the pot of soup to a boil. When the soup starts to boil, add the tortellini, kale (or escarole, or spinach), and heavy cream. Reduce to a simmer and let simmer for approximately 10 minutes. The cream is the secret ingredient that makes this a creamy soup and balances some of the heat from the spicy sausage
Season with salt and pepper to taste, or a pinch of red pepper flakes. Serve with freshly shaved parmesan cheese.
