Mushroom Sausage Skillet Recipe with Baby Spinach

Mushroom Sausage Skillet Recipe Ingredients
All of the simple ingredients needed for this easy recipe can be found at the local grocery store. You will need:
- 2 (8oz) packages of sliced baby bella mushrooms, chopped
- 1 Tbsp avocado oil (or olive oil)
- 1/2 cup red or green bell pepper, diced
- 1/4 cup yellow onion, diced
- 2 cups fresh baby spinach, chopped
- 2 garlic cloves, minced
- 1 lb Italian sausage
- or 1 lb ground pork sausage with 2 Tbsp Italian seasoning
- salt and pepper to taste
How to Make an Easy Mushroom Sausage Skillet Meal

First, heat the oil in a large skillet over medium heat. Then add the pork sausage and cook for about 5-7 minutes until brown and crumbly.
Next, add the Italian seasoning and the onions to the skillet with the cooked sausage. Add salt and black pepper to taste. Cook for another 2-3 minutes until the onions are translucent.
Then add the garlic and the bell peppers. We are using red peppers this time.
Make sure to first chop the sliced mushrooms into small pieces and then add the chopped mushrooms to the skillet. Cook for another 5-7 minutes to fully combine the flavors of the mushroom mixture.
Lastly, add the spinach to the skillet.
Continue to stir for a few extra minutes with a wooden spoon to combine until the greens are wilted and thoroughly combined with the mushroom sausage mixture.

This skillet dish is a great option for an easy weeknight dinner. It can be enjoyed as the main course or side dish. To keep it low carb we sometimes pair this with cauliflower rice.

- Can I add pasta to this recipe? Of course, you can. This will obviously alter the recipe but you can always either add cooked pasta to the skillet dish or serve a simple pasta dish alongside this mushroom sausage skillet recipe.
- What other types of mushrooms can I use in the recipe? We are using baby portobello mushrooms, but you can try plain white large mushrooms (and chop them smaller), or even cremini mushrooms.
- Can I use hot Italian sausage? Sure, you can use hot Italian or sweet Italian sausage.
